The Champagne Perseval CMY R.23 by Cose is born from the meeting between the young Maison from Chouilly and the renowned vigneron Thomas Perseval, who from the Premier Cru village of Chamery, in the Petite Montagne de Reims, supplies the grapes for this ambitious project. This Blanc de Noirs takes shape from the single La Pucelle lieu-dit, planted in 1960 at the foot of the slope, where soils of sand and limestone give Meunier an unexpected depth, capable of translating the place into a vibrant expression that goes beyond the simple roundness of the variety.

This edition, 2023 harvest, from pure Meunier, involves pressing with a vertical Coquard press, while vinification and spontaneous fermentation take place in 225-litre barrels of second to fifth use. After the tirage comes ageing of over 18 months on the lees, with no final dosage, in a brut nature style, which leaves the variety free to express itself with absolute transparency and without any mediation.

On the palate, Perseval CMY R.23 reveals an ample profile with an enveloping touch, sustained by a fine salinity that lengthens and broadens the finish with great naturalness. The structure remains taut and luminous, able to combine fullness and drive in a dynamic balance, where the mineral energy leads towards a long, vibrant persistence that is deeply coherent with its origin. Produced in a limited run of only 1,632 bottles.
