The Champagne Bouvet BSL R.23 by Cose is born from the meeting between the young Maison from Chouilly and the talented vigneron Antoine Bouvet, who from the Premier Cru village of Bisseuil, in the Grande Vallée de la Marne, supplies the grapes for this ambitious project. This Blanc de Blancs takes shape from the Les Rocheforts lieu-dit, planted in 1958 with a West and North-West exposure, where the surfacing chalk gives Chardonnay a luminous purity and a vertical tension capable of translating the place into a crystalline, precise and deeply sincere expression.

This edition, 2023 harvest, from pure Chardonnay, involves pressing with a vertical Coquard press, while vinification and spontaneous fermentation take place in 225-litre barrels of second to fifth use. After the tirage comes ageing on the lees for a minimum of 18 months, with no final dosage, in a brut nature style, a choice that keeps the natural tension of the terroir intact and enhances its crystalline purity.

On the palate, Bouvet BSL R.23 reveals a linear profile with a chiselled touch, sustained by a fine salinity that lengthens and broadens the finish with great naturalness. The structure remains taut and luminous, able to combine vertical drive and a touch of richness in a dynamic balance, where the mineral energy leads towards a long, vibrant persistence that is deeply coherent with its origin. Produced in a limited run of only 1,632 bottles.
