PN AYC21 Magnum
The Champagne PN by Bollinger is one of the most authentic and experimental expressions dedicated to Pinot Noir, the beating heart of the Maison's style. Born from in-depth research into the various origins of the grape variety in Champagne, this line embodies the desire to honour its own heritage while opening up to ever-new interpretations, and with each edition it reaffirms a legendary savoir-faire, reinventing in a contemporary key the character of this emblematic variety.
This AYC21 edition, the seventh in the series, places at its centre the Grand Cru village of Aÿ, the main source of the blend, a terroir of choice that, thanks to its steep slopes, fragmented chalky soils and south-west exposure, lends the Pinot Noir a structured and vinous expression, joined by selections from Tauxières and Mutigny. It expresses Pinot Noir grapes entirely in a Blanc de Noirs from Grands and Premiers Crus, based on the 2021 harvest completed by 49% of vin de réserve, divided between the 2019 vintage in cask and the 2013, 2012 and 2014 vintages preserved in magnum. After tirage a long ageing on the lees follows, more than twice the time required by the appellation, with a final dosage of 8 g/l, in a Brut style.
On tasting, PN AYC21 appears with a golden-yellow colour and opens on the nose with aromas of ripe yellow fruit such as quince and mirabelle plum, enriched by notes of toasted bread, almond and hazelnut, while an accent of pastry and brioche intertwines with nuances of white flowers and acacia honey. On the palate, the entry combines ripe fruit and confectionery notes enlivened by a touch of citrus, and the creaminess balances with the liveliness in a deep development, leading to a long finish that lingers on a lovely note of blood orange.
