Bardiau is a small family-owned Domaine of 2.6 hectares, located in Verpillières-sur-Ource, in the south of the Côte des Bar. Its roots lie in a winemaking tradition spanning five generations, but it is with Jérémy Bardiau, in 2015, that the current project was born, based on an artisanal and contemporary vision of Champagne.

The vineyard stands out for a rare geological mosaic: about 70% of the soils are Portlandian, rich in recent Jurassic limestone, which gives the wines fineness and minerality. The remaining 30% lies on Kimmeridgian soils from the Upper Jurassic era, where clay prevails, adding roundness and volume to the grapes. In the cellar, Bardiau adopts a natural and rigorous approach, with fermentations entrusted to indigenous yeasts and bacteria, without corrective interventions.

Vinification takes place in barrique, fût de chêne and stainless steel, to enhance each individual plot. The long lees aging allows for a complex and expressive development of the cuvées. The Domaine Bardiau today represents one of the most promising realities of the Côte des Bar, thanks to Jérémy’s precise and passionate vision, capable of sensitively conveying the nuances of the terroir. An emerging talent who combines tradition and innovation to bring authenticity and depth to every bottle.
