Solera N°2

The Champagne Solera by Emeline De Sloovere is the result of the assembly of Meunier (50%) and Chardonnay (50%) grapes from vineyards grown in the Crus of Monthelon and Mancy, in the Vallée de la Marne.
Produced according to the Solera Method with vin de réserve ranging from the 2000 to 2007 vintage, with aging on its own yeasts for at least 54 months before dégorgement. Dosage equal to 3 g/L (Extra Brut).
A rich, powerful and profound Champagne. Dried fruit, citrus, yellow fruits and honey dominate the palate, with smoky notes on the finish. Champagne with an extraordinary expression of maturity and complexity.

Emeline represents the new generation of Vignerons with a bold vision, carrying forward the family brand with an innovative vision and a strong commitment to sustainable production. In his vineyards she has adopted environmentally friendly agricultural practices, renouncing herbicides and pesticides; in the cellar fermentation occurs naturally thanks to the exclusive use of indigenous yeasts, while the use of sulphites is reduced to a minimum. Emeline stands out as a pioneer in her field, forgoing the traditional metal covering of Champagne corks and opting for simple paper bands, an action that reflects her commitment to more eco-sustainable solutions.

Emeline De Sloovere is a young vigneronne who carries on with passion and determination the family legacy that dates back five generations. Oenologist and owner of the family business, Champagne De Sloovere-Pienne located in Brugny-Vaudancourt, in the renowned Vallée de la Marne, Emeline took the lead in wine production in 2015, following in the footsteps of her grandfather, Alain Pienne . Thanks to a training period in the United States, Emeline has expanded her experience and knowledge, acquiring innovative techniques and a modern vision of the wine sector. Upon her return, following a philosophy based on environmental sustainability, she introduced numerous changes, including parcel fermentation in small wooden barrels, the use of indigenous yeasts and the abandonment of practices such as cold stabilization and filtration. Since 2016, in her eight hectares of vineyards located in the Coteaux Sud D'Epèrnay, Emeline has adopted environmentally friendly agricultural practices, renouncing herbicides and pesticides, and practicing vegetal cover. The Domaine also hosts an organic vegetable garden, inaugurated in July 2020, which contributes to biodiversity and provides ingredients for the farm-to-table concept. Permaculture is at the center of Emeline's commitment, with particular attention to the vegetable garden, and with the aim of extending these practices also to the cultivation of vines. Trees, flowers and birdhouses are distributed throughout the grounds to promote a harmonious growing environment. Driven by an awareness of the environmental impact of traditional winemaking practices, Emeline De Sloovere has resolutely embraced change by introducing sustainable solutions. Among the various initiatives adopted, one of the most significant was the replacement of the metal covers of Champagne bottles with simple paper bands, dictated by the awareness of the pollution deriving from traditional materials. This bold decision not only represents an important step forward towards a broader concept of environmental sustainability, but also reflects Emeline's deep commitment to a more eco-friendly winemaking future. Her innovative vision aims to preserve the delicate balance between wine production and the surrounding environment, demonstrating that it is possible to combine quality, aesthetics and environmental responsibility in the world of wine.
