Blanc de Blancs Millésime 2017

Champagne Blanc de Blancs Millésime 2017 by Colette Bonnet is the result of the blending of 56% Chardonnay and 44% Pinot Blanc from grapes from the vineyards of Noë-les-Mallets, in the Côte des Bar.
Millésime 2017, the must after pressing is sent to the Center Viticole de Chouilly to be vinified according to a model of minimal intervention established by Colette. Dosage equal to 4 g/l (Extra Brut).
Golden color with greenish reflections of considerable brilliance. On the nose aromas of yeast, fresh bread and butter, followed by notes of hawthorn and acacia and on the finish fresh notes of lemon peel with a hint of minerality. On the palate the attack is broad, generous, typical of Pinot Blanc; a more delicate and floral profile follows, complemented by subtle citrus aromas. Balanced acidity and salinity on the finish that guides the softness of this Blanc de Blancs in the making.
Recommended in combination with crustaceans with salted butter and grilled fish.

Champagne Colette Bonnet

Vigneron Récoltant in the heart of the Côte des Bar, Domaine Colette Bonnet, which takes the name of its founder, has 2.25 hectares in Noë-les-Mallets. The vineyards, with an average age of 20 years, have been cultivated with Pinot Noir, Pinot Blanc and Chardonnay according to the principles of organic viticulture since 1998 and certified since 2012. The Domaine has a state-of-the-art pressing center, created and managed by Colette with her brother Bélorgeot Thierry, also a Vigneron in Noë-les-Mallets. The centre, made up of two 4000 kg presses and a 400hl cold room, is approved and certified for the pressing of organic grapes. After pressing, the musts are sent to the Center Viticole de Chouilly to be vinified, according to a minimal intervention model, which involves the use of indigenous yeasts, minimal sulphites and natural/extra brut dosages. Colette Bonnet Champagnes are characterized by the mineral and saline expression, typical of the Kimmeridgian soils from which the grapes come.
