Charles Dufour had a first traditionalist approach to viticulture and then almost immediately left room for organic farming. His Champagnes reveal immense authenticity capable of reflecting the character of the terroir of the Côte des Bars. The latest editions of the BISTRØTAGE collection are the result of grapes harvested in the vineyards owned by his mother Françoise and for this reason the label indicates the DOMAINE FRANÇOISE MARTINOT.

The Champagne Bistrøtage Rosé B.11 is a rosé made from 100% Pinot Noir harvested from vineyards with a clayey-calcareous terroir located in the Vallée de l'Arce (Côte des Bar). Harvested in 2011, grapes equally vinifies in wooden vats and no dosage and sulfur was added in the phase of disgorging. This Champagne Rosé de Saignée has a pinkish orange color, is rather soft and dynamic with a very long and citrus finish.

Vigneron from Aube, more precisely from Landreville, not far from Bar-sur-Seine, Charles Dufour is a wine grower representing a new generation of small vignerons. He started producing high quality Champagne in 2006 in the family business, then he decided to convert to organic agriculture, conversion completed with the harvesting in 2010. All grapes for his new line Charles Dufour - Les Vignes du 7 are now strictly certified. Charles' purist choice is not limited to the elimination of chemicals in the field, it also affects the vinification process, even though it is a very complicated one for Champagne. This is Charles Dufour's recipe for an authentic Champagne, able to reflect the terroir of the Côte with a round taste, before beign successful Champagnes.
