Champagne Thibault Tassin
Les Belles Piéces 2019

Champagne Les Belles Pièces 2019 by Thibaut Tassin is the result of the blending of 70% Pinot Noir and 30% Chardonnay from vineyards of the property parcels (Lieux-dits) "Dalivard" cultivated 100% Chardonnay and "Les Fioles" cultivated 100% Pinot Noir in Celles-sur-Ource, in the Côte des Bar.
Cuvée produced from the best vintage grapes, the percentage of Pinot Noir and Chardonnay varies from year to year depending on the character that the producer wants to give to the wine. Product of the 2019 harvest, Champagne Les Belles Pièces vinifies entirely in fûts de chêne in the most natural way possible: all fermentation, clarification and stabilization processes happen spontaneously, without any intervention, letting the time to take its course. No added dosage (Brut Nature). Limited edition product for only 400 bottles.

Champagne Thibault Tassin

The story of Thibaut Tassin and his Champagnes is once again the evidence of a new generation of Vignerons who, driven by a strong motivation, have chosen to leave the family business to embark on their own path and bring their own interpretation of Champagne. Thibault is the latest generation of the Tassin family, winemakers of the Côte des Bar known in the Champenois panorama for their Champagne "Tassin Successeurs". Since 2019, Thibault with his wife Alizée has managed to obtain from the family just over one hectare on two plots in Celles-sur-Ource and after buying an old farm in Landreville, create their cellar together. In the vineyard, they immediately integrate the fundamental principles of organic viticulture including the use of natural cultivation techniques, the promotion of biodiversity, the analysis and observation of the terroir. Specifically: integration of the native flora with the vines, the pruning techniques that take into account the flow of sap and the use of organic fertilizer for tilling the soil, are some examples of the practices. The official conversion to organic started in 2021 and the first certified organic Champagne will be in 2023.
