L'Appel de la Foret (2nd edition)

Champagne L'Appel de la Forêt by Pascal Henin is the result of the blending of 80% Pinot Noir and 20% Chardonnay from grapes from the vineyards of the family Domain in Aÿ, Grand Cru of the Vallée de la Marne.
2nd edition to be released, this cuvée marks the generational passage from father to son, the transmission of know-how and values, of a wealth of knowledge and skills learned over the years from Pascal. On one hand Pascal, linked to the Champenoise tradition and a more classic style, on the other Romain, with innovative ideas and the desire to experiment. This is the transitional Champagne, two different visions but which have found a meeting point summarized in the expression "understanding the vineyard and the wine will come by itself".

Disgorged in October 2022 and dosed with the must from the 2022 harvest made by Romain, this Champagne reflects the power and character of the Aÿ Grand Cru terroir.
The label was created by Quentin Maza, an artist already known in the Champagne world for having created the labels of other Vignerons such as Antoine Bouvet, Paul Gosset, Carré Frères, Les Freres Mignon…

Champagne Romain et Pascal Henin

Romain and Pascal Henin, represent the story of Champagne of Aÿ that is handed down from generation to generation. Pascal Henin, historical Récoltant-Manipulant and Vignerons-Indépendants, cultivates his vineyards in the grands terroirs of the Vallée de la Marne: Aÿ and Chouilly, Grands Crus, and Mareuil-sur-Aÿ and Dizy, Premiers Crus. The work in the vineyard is precise and rigorous, the cultivation methods follow the rules of tradition and in recent years he has engaged in a program that promotes environmentally friendly practices which has allowed him to obtain the HVE environmental certification in 2019. Pascal follows the entire winemaking process, managed with traditional methods combined with new techniques; the practice involves natural decantation, alcoholic fermentation with selected yeasts, natural malolactic fermentation and no filtration or clarification. Pascal's son, Romain has leapt onto the Champenois scene a few years ago, also bringing his father's Champagnes to the fore, with which, despite different visions in terms of vineyard management and winemaking, he seems to have found common ground. Romain Henin, is a new generation winemaker who follows the wave of artisanal Champagnes and non-interventionist philosophy. In the vineyard he uses biological and biodynamic practices without the use of chemicals, additives and added sulphites. Same approach also in the cellar where fermentation is triggered naturally with the use of indigenous yeasts. The partnership between Pascal and Romain are structured and precise Champagnes, identity Champagnes that reflect the character of the Aÿ  terroir. To date, they can be considered "transitional" Champagnes, a compromise between a mature vision of Pascal, rooted in tradition and a more classic style, and the more innovative and experimental one of Romain. In any case, the "handover" from father to son has begun, we just have to wait for the next releases to understand how Romain will reinterpret the Henin Champagnes.
