Since 2021, the estate has been in organic conversion, with the first certified cuvée expected from the 2023 harvest. In the cellar, every gesture reflects the same consistency: spontaneous fermentations, indigenous yeasts, aging in Burgundy barrels, and minimal dosage to enhance the wine’s purity. Each bottle is a story of sincerity, a dialogue between vineyard and taster. Today, Alizée et Thibault Tassin stand among the most promising voices of the Côte des Bar, capable of blending Burgundian sensitivity with Champenois spirit in a Champagne that feels alive, natural, and contemporary.
