Adrien Salot

Adrien Salot pursues an artisanal vision of Champagne in the western part of the Vallée de la Marne through a small two-hectare Domaine divided into micro-plots between the northern and southern slopes of the Marne. Vineyard work is based on respecting the natural balance, preserving biodiversity and the ecosystem through wild grasses, native hedges, and natural streams. The old vines, often more than 60 years old and derived from massal selection, represent the Domaine’s most valuable heritage and help define wines with a strong identity.

The Domaine’s philosophy follows a low-intervention approach both in the vineyard and in the cellar. Soil work is kept to a minimum in order to preserve the vitality of the land, while low yields ensure grapes with remarkable concentration and expressive energy. In the cellar, fermentations occur spontaneously with indigenous yeasts, using tanks, foudres, and 400-liter barrels for the most important cuvées, often with minimal or no added sulphur.

The Champagnes by Adrien Salot stand out for their intense and terroir-driven profile, marked by mineral tension, vibrant structure, and aromatic complexity. The tank-aged cuvées reveal notes of white fruits and fine pastry, while the more evolved interpretations show greater gastronomic depth. Bright acidity, delicate bitter nuances, and long persistence define authentic and highly personal wines produced in very limited quantities.
