The Champagne Ultrablue by Herbert & Co. sums up the identity of a young and bold project, born from the partnership between Thomas Herbert and Marie-Charlotte Mignucci alongside the historic family Maison in Rilly-la-Montagne. It is a blend of Chardonnay and Pinot Noir grapes from vines in Premier Cru and Grand Cru parcels in Rilly-la-Montagne, Ludes, Trois-Puits and Mailly, from the prestigious Montagne de Reims. The blue that defines the project becomes the very name of the wine, expressing a precise, elegant and concentrated style shaped by viticulture that respects the soil and avoids chemicals.

This edition brings together two complementary varieties, with Chardonnay giving tension and verticality and Pinot Noir providing structure and breadth. Vinification and maturation take place over 9 months in 228-litre Burgundy barriques, in keeping with the philosophy of the vigneron, who entrusts every cuvée to oak. After tirage, the wine ages for at least 36 months on its lees before dégorgement. The final dosage of 2 g/l, in Extra Brut style, preserves the purity of the fruit and the freshness of the whole.

On tasting, Ultrablue shows a fine perlage and a fresh nose of citrus and apple, enriched by a light floral note and delicate hints of brioche. On the palate it is supple and dynamic, with a fine mousse and steady freshness carrying clear, well-defined fruit. The tension of Chardonnay and the structure of Pinot Noir find a harmonious balance, leading to a clean, elegant and persistent finish.
