The Champagne Les Revenants by Étienne Calsac was created as a tribute to the viticultural heritage of Champagne and its Cépages Oubliés, the historic grape varieties that almost disappeared after phylloxera. It is a cuvée that combines research, identity, and biodiversity, giving voice once again to an ancient and precious genetic legacy. In the hands of Calsac, a young vigneron from Avize, these varieties regain their vitality and character, telling a story that weaves together rural tradition and modern vision. The name “Les Revenants” – “the returned” – perfectly evokes this rebirth, a bridge between past and future.

The blend brings together three Cépages Oubliés of Champagne — Arbane, Petit Meslier, and Pinot Blanc (or Blanc Vrai) — sourced from Grand and Premier Cru micro-parcels between Avize and Grauves. The vinification and fermentation take place in a single 600-liter oak cask for about seven months, a choice that preserves varietal purity and enhances the most authentic expression of the terroir. This is followed by 30 months of lees aging, enriching the cuvée with depth and complexity. The final dosage of 2 g/L, in Extra Brut style, reflects Calsac’s hallmark: precision, transparency, and finesse always favored over power.

On the palate, Les Revenants opens with aromas of white flowers, crisp pear, ripe citrus, and a delicate hint of fresh almond. The mouthfeel is vibrant and tense, defined by a mineral and saline texture that supports a fine and creamy mousse. The balance between tension and roundness leads to a long, pure, and citrusy finish of impeccable elegance.
