Champagne Cose was born from the friendship and shared vision of Victor Allier and Gil Conejo. Victor is a central figure in Champagne's hospitality scene, known for Sacré Bistro and Sacré Burger, cult venues frequented by vignerons and Champagne Lovers. Gil, a Mexican winemaker of long experience, honed his craft alongside Jean-Baptiste Geoffroy (Champagne Geoffroy) and for over a dozen Domaines, becoming a recognised technical reference. "Why not us?": from this question their manifesto was born, one that restores nobility to the role of the négociant.

The project came to life in 2022 in Chouilly, in the Côte des Blancs, in a small garage transformed into an oenological laboratory. Challenging the notion that négociant is synonymous with large scale, this Maison chooses an artisanal and rigorous path: each year it selects grapes from a few vigneron friends, pressed in their own cellars and aged in small oak barrels, many of them sourced from Jacques Selosse. There are no cuvées: every vintage, produced in tiny quantities, ferments entirely in wood, with malolactic fermentation in barrel and secondary fermentation under natural cork. A young Maison, rare and authentic, a tribute to small producers and to the identity of the terroir.
