The Champagne B16 by Bollinger is a limited and visionary edition, the third chapter of the By Bollinger series, conceived to give shape to a challenging millésime while showcasing the environmental values and the pursuit of sustainability of the Maison. Born from the exploration of unusual terroirs, located in the latest-ripening sectors of the Montagne de Reims, this Champagne even leaves behind the historic grapes of Aÿ in search of a new voice, more aerial and delicate, where power and precision meet in a refined balance of rare purity.
This third edition, Vintage 2016, comes from a year of strong contrasts, with a cold and very rainy spring marked by late frosts, followed by a hot and sunny summer that delivered ideal ripening. The blend shows a predominance of Pinot Noir at 73% alongside Chardonnay at 27%, exclusively from Grands and Premiers Crus such as Bouzy, Verzenay, Verzy, Tauxières and Trépail. Vinification and maturation take place in small oak barrels, and after tirage under cork a lees ageing of around 7 years follows, with manual remuage and dégorgement and a final dosage of 4 g/l, in an Extra Brut style.
On tasting, B16 reveals itself with extraordinary elegance, with a luminous robe of fine golden reflections and a refined bouquet in which white flowers, hawthorn and acacia honey introduce nuances of white-fleshed fruit, bergamot and sweet almond. On the palate the silky texture unfolds with aerial finesse, offering a velvety sensation sustained by a vibrant freshness and a perfectly calibrated balance, leading to a long, delicate and persistent finish of impeccable harmony.
