Herbert & Co.

In Rilly-la-Montagne, a Premier Cru village of the Montagne de Reims, Thomas Herbert and his partner Marie-Charlotte Mignucci created Herbert & Co alongside the family Domaine, signing their first harvest in 2016. The vineyards, around seven hectares, are spread across the Premiers Crus of Rilly, Trois-Puits and Ludes and the Grands Crus of Mailly and Verzenay, farmed with a sustainable approach that forgoes insecticides, favours natural methods and relies on careful pruning to ensure healthy, fully ripe grapes.

In the cellar every gesture aims to let the terroir speak, with spontaneous fermentations driven solely by indigenous yeasts, at least nine months of ageing in Burgundy barrels and no less than three years of rest on the lees. The result is structured, complex Champagnes of seductive charm, produced in tiny quantities, around one barrique per cuvée. Rare bottles, well worth seeking out patiently to discover the freest and most authentic face of the Montagne de Reims.
