Cuve X
The Champagne Cuvée X by Herbert & Co. is the most intimate and rare expression of the work of the Herbert family, who have tended their vineyards in the Montagne de Reims for over a century. The grapes come from the Premier Cru villages of Rilly-la-Montagne, Ludes and Trois-Puits and from the Grand Cru villages of Verzenay and Mailly. This mosaic of villages gives the wine brightness, finesse and a depth that reveals itself only with time.
This edition, from the 2016 harvest, shows a clear prevalence of Chardonnay grapes at 70%, alongside 30% Pinot Noir grapes. Vinification and maturation take place over nine months in 228-litre Burgundy barrels. The carefully measured oak brings breadth and complexity while preserving the tension and clarity of the Chardonnay. After tirage, it undergoes a long ageing of at least six years on the lees before dégorgement, which gives great finesse to the perlage and a rich aromatic layering. The final dosage of 2.5 g/l, in Extra Brut style, keeps the wine pure and essential, true to its fruit and terroir.
On tasting, Cuvée X shows a brilliant golden colour and a fine, persistent perlage. The nose opens with aromas of ripe fruit, candied citrus and toasted hazelnut, threaded with a subtle mineral vein. On the palate it reveals fullness and harmony, with an elegant, deep structure leading to a finish of remarkable persistence. Production in a limited run of 250 bottles.
