Champagne Extra Brut
1000% Chardonnay

The Champagne 1000% Chardonnay by Herbert & Co brings Chardonnay to a land historically devoted to Pinot Noir such as the Montagne de Reims. The grapes come from Premier Cru plots in Rilly-la-Montagne, Ludes and Trois-Puits and from the Grand Cru villages of Verzenay and Mailly-Champagne, where the cool climate and chalky soils give the variety a taut, mineral voice. It is the expression of a new-generation grower, who sees Champagne first and foremost as a wine and lets a single grape variety tell its own terroir.

This first edition, from the 2022 harvest, is a Blanc de Blancs that brings together the different nuances of these villages in a single cuvée, combining the finesse of the Premier Cru sites with the depth of the Grand Cru. Vinification and fermentation, carried out with indigenous yeasts, take place in 228-litre Burgundy barrels, where the wine matures for nine months. After tirage, three years of ageing on the lees follow, adding depth and finesse to the texture. The final dosage of 2.5 g/l, in Extra Brut style, lets the tension of fruit and terroir emerge with full transparency.

On tasting, 1000% Chardonnay reveals an aromatic profile of dried flowers, chamomile and herbs, enriched by toasted oak, hazelnut and almond, while aeration adds white pepper, nutmeg and citrus zest. On the palate it is direct and linear, with hints of fresh pear and green apple, as the time in oak brings texture and structure without heaviness, supported by a taut, bright acidity that ensures precise balance. The finish is long, saline and vibrant, with a persistence that closes on lime zest and a fine bitter note. Production in a limited run of 2,470 bottles.
