Cuve X 2.0 Vintage 2016
The Champagne Cuvée X 2.0 by Herbert & Co. offers a bright and sophisticated interpretation of Blanc de Blancs. It is a rare expression of Chardonnay grapes grown in the Grand Cru villages of Verzenay and Mailly, in the Montagne de Reims, historically tied to Pinot Noir. From this singularity comes a cuvée unique of its kind, where the tension and finesse of the two Grand Cru villages meet the brightness of Chardonnay. It carries the signature of the Herbert family, who have tended their vineyards in the Montagne de Reims for over a century.ì
This edition, Vintage 2016, comes from carefully selected grapes, vinified and matured for nine months in 228-litre Burgundy barrels. The carefully measured oak brings structure and depth without altering the freshness and clarity of the Chardonnay. After tirage, it undergoes extended ageing of at least seven years on the lees before dégorgement, which develops layered aromatic complexity and a mousse of great elegance. The final dosage of 2 g/l, in Extra Brut style, preserves the purity of expression and the tension of the wine.
On tasting, Cuvée X 2.0 reveals itself in its clearest and most essential form. The nose weaves together, in great harmony, notes of ripe citrus, white flowers, dried fruit and light toasty hints. On the palate it shows precision and rigour, with a creamy mousse and taut freshness that support the structure and lead to a long, refined finish of remarkable persistence. Production in a limited run of 2,000 bottles.
