The Champagne 1000% Pinot Noir by Herbert & Co. carries a statement of intent in its very name: to celebrate, beyond all measure, the soul of the grape that defines the Montagne de Reims. Thomas Herbert, the fourth generation of a family rooted in Rilly-la-Montagne for over a century, crafts a Blanc de Noirs that expresses the depth of the Premier Cru villages of Rilly-la-Montagne, Ludes and Trois-Puits alongside the tension of the Grand Cru villages of Verzenay and Mailly. The vineyards are farmed with respect for the soil and without synthetic chemicals.

This fourth edition, from the 2022 harvest, comes from grapes vinified and fermented in 228-litre Burgundy barrels. The wine matures there for nine months, and the carefully measured oak gives it greater breadth, complexity and a more enveloping texture without masking the tension and clarity of the Pinot Noir. After tirage, it ages for at least 36 months on the lees before dégorgement, which brings finesse to the perlage and depth to the aromatic profile. The final dosage of less than 3 g/l, in Extra Brut style, preserves the purity of the fruit and the signature of the terroir.

On tasting, 1000% Pinot Noir shows an intense golden colour and a fine, persistent perlage. The nose opens with notes of ripe red fruit, delicate spices and subtle toasty hints from its time in oak. On the palate it reveals structure and balance, with vibrant freshness supporting the depth of the fruit and leading to a long finish with a persistent mineral trail. Production in a limited run of 2,457 bottles.
