Champagne Guillaume Sergent
Les Prés Dieu B.O.
The Champagne Prés de Dieu by Guillaume Sergent is a Blanc de Blancs that brings together two complementary souls of the Montagne de Reims, Les Prés (lieu-dit) in Vrigny, facing east on sandy soils, and Les Vignes Dieu (lieu-dit) in Coulommes-la-Montagne, facing south on more calcareous ground. These two plots come together in a Chardonnay full of energy, tension and mineral elegance, a sincere reflection of its vigneron's free-spirited, artisanal approach and of the identity of these places.
This B.O. edition takes its name from bouteilles oubliées, bottles deliberately forgotten in the cellar, and is the rarest version of the cuvée. Based on the 2018 harvest, it was vinified and matured entirely in oak barrels with spontaneous fermentations, following an artisanal approach that keeps the purity of the fruit intact. After tirage comes a long ageing on the lees of around 60 months, bringing complexity and great finesse, while dégorgement takes place with no final dosage, in an Extra Brut style.
On tasting, Prés de Dieu B.O. shows a luminous golden hue with a fine and persistent perlage, and aromas of ripe yellow fruit, candied citrus, dried flowers and almond, enriched by mineral accents and light hints of honey and sweet spice brought by the long ageing. On the palate it is taut and precise, with a full, vibrant substance and a chalky texture carrying its development towards a long, saline finish of great persistence. Production in a limited run of 263 numbered bottles.
