Chaillots Gillis 2018
The Champagne Chaillots Gillis by Nicolas Maillart is a rare Blanc de Blancs that expresses the most intimate soul of Écueil, a Premier Cru village from the Montagne de Reims where the family has been bound to the vineyard for generations. The grapes come from old vines planted in 1963 through massal selection, growing on soils rich in clay and limestone that give the wine a firm and recognisable mineral imprint. The vineyard is farmed with respect for natural cycles, with organic and biodynamic practices supported by conventional treatments only when strictly necessary, following a pragmatic approach attentive to the balance of the plant.
This edition, Vintage 2018, entrusts the Chardonnay grapes to vinification and maturation entirely in wood, a choice that adds structure and depth without ever masking the purity of the fruit. After tirage, the wine ages on the lees for at least 36 months, reaching an expressive maturity that combines tension and complexity in a balance of great finesse. With no final dosage, in Extra Brut style, it keeps all its verticality and reveals intense freshness and vibrant salinity.
On tasting, Chaillots Gillis 2018 stands out for its aromatic precision and purity of substance, with a chiselled profile where citrus and floral notes intertwine with hints of dried fruit and delicate chalky nuances. On the palate it reveals a slender and taut structure, supported by lively salinity and a freshness that carries its development through to a long and persistent finish, in harmonious balance between depth and verticality. Total production amounts to 3,633 bottles.
