The Maison owns vineyards but buys grapes from other wine-grower, before starting the production of Champagne. It can also entrust someone else to produce, but the last steps of the process must occur inside the maison, namely disgorging and dosage. The Maisons are 270 today and the production of 10% of them makes up the halft of the entire market. They are identified with NM(Négociant-Manipulant) on the label.
