Champagne Vincent Cuillier
Blanc de Sable
The Champagne Blanc de Sable by Vincent Cuillier is a refined and authentic tribute to Chardonnay and to the sandy terroir that gives it its name. The grapes come from the Au Dessus de RĂ©silvat (lieu-dit) plot, in the village of Trigny in the Massif de Saint-Thierry, where sandy soils rich in fossils give the wines a vibrant minerality and an unmistakable aromatic profile. The result is a Blanc de Blancs of great personality, which honestly expresses the deep bond between the vineyard and this area north-west of Reims.
This edition, harvest 2021, follows a natural and artisanal approach, with vinification and spontaneous fermentation in 500-litre barriques, where the wine matures for 10 months before being bottled without fining or filtration, so as to keep its expression intact. After the tirage comes an ageing of at least 24 months on the lees, a long rest that gives the wine a complex structure and a depth of flavour that enhance its identity. With no final dosage, in Brut Nature style, it offers a pure and faithful reading of its terroir.
On tasting, Blanc de Sable stands out for a finesse and elegance that are evident from the first impression, together with an incisive minerality that precisely reflects the character of the sandy soil of Trigny. On the palate it reveals a taut and harmonious balance, in which the structure built during the long ageing on the lees supports a lively freshness and leads to a deep finish of remarkable persistence.
