Champagne Pinot-Chevauchet
Sablière
The Champagne Sablière by Pinot-Chevauchet is a Blanc de Blancs of extraordinary purity, made exclusively from Chardonnay harvested in 2020, grown in the plot known as “Sablière” (Lieu-dit), located in the Premier Cru village of Moussy, in the heart of the Vallée de la Marne. Vinification takes place in large Burgundy oak barrels, with no malolactic fermentation, in order to preserve the wine’s natural freshness and tension. The aging on the lees lasts for at least 3 years, followed by a dosage of just 3.5 g/l – Extra Brut, enhancing the finesse of the vintage and the expressive clarity of the terroir.
On tasting, Sablière reveals a brilliant golden yellow hue, animated by a fine and persistent perlage. The aromatic profile is elegant and restrained, with notes of white-fleshed fruit, white flowers, and subtle mineral nuances. On the palate, it is generous and structured, with a lively freshness and a long, harmonious finish, clearly reflecting the identity of its origin.
