The Coteaux Champenois Blanc by Chavost reveals the most intimate and least known side of Champagne, that of the still wines which for centuries preceded the bubbles and which today are once again sincerely expressing the voice of the land. From the hills of Chavot-Courcourt, in the Coteaux Sud d'Épernay, this white comes from north-facing vineyards on clay and limestone soils, interpreted with a respectful, low-intervention philosophy that seeks the most authentic purity of the fruit.
This edition, from the 2022 harvest, is made from Chardonnay grapes picked at advanced ripeness, with vinification and natural fermentation in oak barrels without any added sulphites, followed by around 24 months of maturation that brings breadth and depth. Bottling took place in September 2024 without filtration, a choice that keeps the material intact and conveys all the expressiveness of a warm and generous vintage.
On tasting, the Coteaux Champenois Blanc 2022 opens with an intense and enveloping aromatic profile of butter and milk, enriched by notes of lemon, ripe pineapple and toasted bread that outline its richness and complexity. On the palate the freshness of a very ripe Chardonnay supports, with fine balance, a material rich in vinosity and salinity, unfolding with coherence and lovely persistence towards a chalky and very pleasant finish. Total production of 2,877 bottles.
