Rosé!
The Champagne Rosé! by Chavost celebrates with energy and spontaneity the juiciest side of the Vallée de la Marne, offering a lively Rosé of bold character that consistently embodies the philosophy of the sans sulfites ajoutés range. Five hectares in the village of Chavot-Courcourt, officially converted to organic farming, reflect careful and respectful viticulture, aimed at expressing the fruit in its purest, most sincere and authentic form.
This edition is based mainly on Pinot Noir grapes, at 66%, completed by 34% Meunier and obtained exclusively from the tête de cuvée, with vinification and spontaneous fermentation in temperature-controlled stainless steel thanks to indigenous yeasts and bacteria, without added sulphites or fining before bottling. After tirage, carried out with concentrated grape must, comes ageing on the lees for a minimum of 24 months, while dégorgement takes place with no final dosage, in Brut Nature style.
On tasting, Rosé! shows a brilliant pink colour and a fine, steady perlage, opening with intense notes of blackcurrant, cherry and stewed raspberries that shape a generous, clear and truly inviting aromatic profile. On the palate it is structured, broad and vibrant, with a texture reminiscent of a red wine supported by a fine freshness that keeps its balance intact, leading to a long and savoury finish, rich in fruit and of pleasant persistence.
