Blanc de Meunier

The Champagne Blanc de Meunier by Chavost pays tribute to the most representative grape of the Vallée de la Marne, long confined to a secondary role and now appreciated for its ability to produce fruity, generous wines of great personality. From the vineyards of Chavot-Courcourt, on north-facing plots with clay and limestone soils farmed organically, comes a sincere interpretation of the sans sulfites ajoutés range, designed to express the fruit without filters.

This edition, a Blanc de Noirs made solely from Meunier grapes, is obtained exclusively from the tête de cuvée, with vinification and spontaneous alcoholic and malolactic fermentation in temperature-controlled stainless steel thanks to indigenous yeasts and bacteria, without added sulphites, fining or filtration. After tirage, carried out with concentrated grape must, comes ageing on the lees of at least 30 months, while dégorgement is carried out with no final dosage, in Brut Nature style.

On tasting, the Blanc de Meunier reveals a fresh, clear and truly inviting aromatic profile, with notes of stewed small red fruits, pear and apple accompanied by delicate floral hints of hawthorn. On the palate it is vinous and broad, supported by a lively and well-balanced structure that carries the natural generosity of the fruit without ever weighing it down, leading to a long and persistent finish that confirms its precision, purity and authentic character.

Chavost

The Cooperative Chavost , which takes its name from the ancient village of Chavot-Courcourt, south of Epernay in the Vallée de la Marne, was founded in 1946 by a group of winegrowers from the village. Strengthened by the collective values of solidarity, sharing and love of their land, today there are more than 100 growers, who work their own parcels of land according to a very strict internal discipline, covering an area of more than 70 hectares around the village. The aim is to create unique vintage wines that will be the basis of exclusive cuvées.

The commitment of Chavost Cooperative to preserving the environment, the land and the excellence of the wines is constantly expanding, along with the range of Champagnes offers, which now also include those without added sulphites, singular and strongly identifiable, in addition to the traditional ones. Champagne Chavost are Champagne with a strong personality, conveyed to them by the hand of Fabian Daviaux, Chef de Caves who favours atypical, non-interventionist winemaking.
