Champagne Chavost
Paradoxe
The Champagne Paradoxe by Chavost offers a modern reading of the north-facing clay and limestone terroirs on the hills of Chavot-Courcourt, a vision focused on tension, expressive purity and a strong, recognisable sense of place. Harvests carried out at optimal ripeness and sustainable viticulture give life to a cuvée that combines the freshness of the coolest sites with the depth of the traditional grape varieties, enhancing authenticity and transparency in every detail.
This edition, a blend of the 2019 to 2023 harvests, combines 60% Chardonnay grapes with 40% Meunier, with vinification and fermentation split equally between barriques and foudres on one side and temperature-controlled stainless steel on the other, without any added sulphites to preserve the integrity of the fruit and aromatic precision. DĂ©gorgement takes place with no final dosage, in Brut Nature style, bringing out a marked verticality and tension.
On tasting, Paradoxe offers a bold and vivid aromatic profile, with notes of bread and pastry intertwined with ripe pear in an ensemble of fine aromatic freshness and great precision. On the palate it is fine and delicate on the attack, then broadens into greater structure and richness, supported by light and pleasant bitter nuances that bring elegance, leading to an energetic and clear-cut finish of excellent persistence and strong personality.
