At the end of the 14th century, it was in Bouzy that Pinot Noir, originally from Burgundy, was first introduced in the Champagne region. Bouzy Rouge is a living witness to this great period when red wines were the pride of Champagne and the beginning of its reputation.

The Côteaux Champenois Bouzy Rouge by Pierre Paillard is a red wine made from 100% Pinot Noir grapes harvested in 2019 from the lieu-dit 'Les Mignottes', an old vineyard over 45 years old located near the Grand Cru village of Bouzy. Vinification with maceration and of the (destemmed) grapes for about 15 days, followed by ageing for 12 months in 228-litre oak barrels before bottling for only 2,206 bottles.

The Côteaux Champenois Bouzy Rouge 'Les Mignottes' by Pierre Paillard is a very seductive red wine with a ruby red colour and deep red fruit bouquet. It surprises on the palate for its sweetness and delicacy, perfectly balanced by an incredible finesse.

The Paillard family has been active in Bouzy, in the heart of Montagne de Reims, since the 18th century. After eight generations, they turned into an independent family domaine, self conscient of its development skills in the field. All Champagnes are produced from prestigiuos grapes Terroir Grand Gru, to obtain complex, elegant and refined champagnes. Around 1768, Antoine Paillard bought a few hectares in Bouzy, where he started following the path of Dom Perignon. From generation to generation, the Domaine Pierre Paillard has broght tradition and innovation into the field and is opened to the future. Its unique and unmistakable style combines the complexity of Pinot Noir with the mineral freshness of Chardonnay.
