Champagne Chevry from Maison Petit Clergeot is made from 100% Pinot Noir, expression of the Chevry parcel (lieu-dit) in Polisot, planted in 1976.
This Champagne Blanc de Noirs, vintage 2018, is the first cuvée released by the Maison and it’s a limited edition with only 3684 bottles produced. Vinification in small stainless steel tanks and maturation on the lees for 30 months; the dosage is 0 g/l of sugar - Brut Nature.
Located in Polisot, in the Côte des Bar, the little Maison Petit Clergeot was created by Paul-Bastien Clergeot who set up his own winery in 2017. The estate vineyard occupies 8 hectares total spread over the following 3 villages: Polisot, Balnot sur Lagne and Les Riceys.
From the beginning, Paul-Bastien Clergeot has embraced the principles of organic farming, and certification is expected from the 2020-2021 harvest. If you asked him to explicate his production philosophy, he would say: "une parcelle, un cepage et une année"; a unique Champagne to create unrepeatable experiences year after year.
