Nowack

Founded in 1795 in the village of Vandières, in the Vallée de la Marne, Domaine Nowack has been run since 2011 by Flavien Nowack, who grew up among the family’s vines and trained with experience in Burgundy, including a period in Meursault at Coche-Dury. Today, he is regarded as one of the most interesting voices of the new generation of Champagne vignerons.

His winemaking philosophy focuses on single-parcel vinifications (Lieu-dit), with separate fermentations and maturations to highlight the nuances of each terroir. In the vineyard, he follows an organic approach, with no chaptalisation or malolactic fermentation, and uses indigenous yeasts for the prise de mousse. A distinctive feature is the use of unfermented grape must for the second fermentation, resulting in slightly lower bottle pressure and a marked silky vinosity.

Alongside the Lieu-dit range, Flavien has created the "Cru d’Origine" line, dedicated to exploring individual villages, using both estate-grown fruit and grapes from selected organic growers. The first edition was dedicated to his native village of Vandières. A young talent with a clear vision, Flavien combines technical precision, respect for nature, and a quest for the purest expression of terroir.
