The Champagne Les Fervins “7 Cépages” 2018 by Mouzon Leroux is crafted from the assemblage of the seven grape varieties authorized in Champagne: Arbane, Petit Meslier, Pinot Gris and Pinot Blanc – the so-called cépages oubliés, historic varieties now almost vanished – together with Chardonnay, Pinot Noir and Meunier. All the grapes come from the same vintage, 2018, and from a single vineyard: the Lieu-Dit Les Fervins, a complantée parcel, meaning co-planted with all seven varieties, located near the Grand Cru village of Verzy, in the Montagne de Reims.
Vinification and maturation take place in fûts de chêne, with spontaneous fermentations and an artisanal approach that emphasizes authenticity and complexity. After tirage, the wine undergoes over 48 months of aging on the lees, developing elegance, depth and pronounced aromatic complexity. The final dosage is minimal, only 1 g/l (Extra Brut), ensuring expressive purity and fidelity to the terroir.
On tasting, Les Fervins 2018 displays a bright golden-yellow hue, animated by a fine and persistent perlage. The bouquet is broad and multi-layered: aromas of ripe pear, yellow apple and white peach intertwine with more unusual notes linked to the forgotten grapes, such as aromatic herbs, wildflowers and candied citrus. Nuances of fresh hazelnut, bread crust and acacia honey also emerge, underpinned by a distinctive mineral backbone of chalk and flint. On the palate it is creamy and elegant, sustained by a vibrant freshness that enhances its fruit richness. The mineral texture, sharp and saline, accompanies a long and layered finish, where dried fruit, fine spices and chalky accents return in perfect harmony.
Production is strictly limited to only 3,051 bottles.
Mouzon Leroux & Fils owns around 10 hectares converted into organic and biodynamic methods: 8 hectares are located in Verzy and the rest lies between Verzenay, Ludes and Villers-Marmery. These three champenoise grapes express a perfect mix between soil, climate and vines coming naturally from Champagne and terroir - authentic and distinctive features. The vineyards are looked after manually, in order to support quality over quantity. This philosophy is vital and gives the grapes its "local taste", as well as a soul and a heart. When grapes are ripe, they are harvested and controlled one by one, to obtain the best must possible. To preserve grapes' integrity, all vinification processes take place naturally. The domaine produces authentic Cuvèes - a unique and balanced Champagne.
