Maxence cultivates 4.5 hectares of vineyards on the southern slopes of the Côteaux Sud d’Épernay, with Chardonnay (60%), Pinot Noir (25%), and a small percentage of Meunier (14%). The clay-limestone soils, with a strong presence of chalk, give his wines freshness and minerality. His first Champagne, Pie Danse, is a unique expression of Pinot Noir, sourced from a mid-slope parcel on brown, clay-rich soils. Debuting in 2024, it embodies his winemaking philosophy: respect for the terroir, freshness, aromatic tension, and vinification by parcel.
