The Champagne Blanc de Meunier by Mathilde Savoye is made from 100% Meunier, harvested from 35-year-old vines located in the lieux-dits “Les Chapelleries” in Cuchery and “La Loge des Vignes” in Baslieux-sous-Châtillon. These plots, nestled in the heart of the Vallée de la Marne, lie on clay-limestone soils that help define the wine’s structure and identity.
The 2022 harvest forms the base of this cuvée, which is vinified exclusively in stainless steel tanks to preserve the varietal purity. The wine rests on its lees for 18 months, gaining finesse and a modest aromatic complexity. The Extra Brut dosage, limited to just 3 g/l, reflects a minimalist stylistic approach that allows the freshness of the Meunier to fully shine through.
On the palate, it reveals a fresh and immediate profile, with aromas of white and yellow-fleshed fruits, delicately accented by light floral notes. The mouthfeel is driven by vibrant tension and a clear mineral character, enhancing both drinkability and overall balance.
Mathilde Savoye is a young winemaker daughter of Champagne winemakers. In 2017, in La Neuville-aux-Larris, municipality of the Vallée de la Marne, she founded her own winery (Savoye Et Filles) in her name, which she manages personally. Mathilde mainly cultivates Meunier, the favorite vine of the area (58.6% of the total vines) which is well suited to the weather conditions of the Vallée de la Marne, where oceanic and continental influences collide, resulting in winter frosts, abundant spring rains and cool summers. The terroir, with a marly tendency, is characterized by silt, clay and sands that condition the character of the softer and fresher Champagne, especially suitable for balancing the cuvées. Little appreciated in the past, Meunier is experiencing a recovery in recent years and many producers, including Mathilde, choose to vinify it on their own to bring out its potential. Enterprising and determined, Mathilde Savoye is dedicated to production practices that lead her to clash with traditional practices and break away from the family Domaine, opting for more sustainable choices such as the return to plowing and the abandonment of herbicides.
