Champagne Nos Esprit Libres et Contents by M. Lefébure is the result of the blending of 70% Meunier and 30% Chardonnay coming from the "des Cornabeaux" and "de Monctonnaux" parcels (lieux-dits) in the Coteaux du Petit Morin, a unique terroir capable of giving Lefébure Champagne strong mineral notes. This Champagne vinifies and ages en fûts de chêne, spontaneous malolactic fermentation and aging on the yeasts for 10 months. The remuage is done à la main and the dégorgement à la volée. No clarification or filtration process. Dosage in the Extra Brut parameters (2 g/ l). Champagne Nos Esprit Libres et Contents opens with buttery and fruity notes of citrus, followed by mineral notes, of flint; the palate is fresh and salty in a vibrant evolution.

Champagne M. Lefébure
In the Coteaux du Petit Morin, between Sézanne and Épernay, and a small part in the Côte de Bars, the Maison Lefébure cultivates its 5.5ha in a terroir with a widespread chalky, clayey matrix combined with silex, capable of giving Champagne great finesse and salinity. It is a family project, led by Marie-Lauren and her husband Sébastien, met during an oenological training in Avize, after abandoning a ten-year artistic career in Paris. Marie-Lauren is keen to point out how their work is focused on the concept of craftsmanship and is animated by passion and dedication. Both committed to the conservation of the environment, in the vineyard they adopt sustainable and natural viticulture methods (in organic conversion), with an orientation towards the enhancement of each single parcel. The average age of the vineyard is about 70 years, and the maintenance and rejuvenation of the vineyard proceeds through mass selection, safeguarding all the native varieties of the Region including Arbane, Petit Meslier, Fromenteau and Pinot Blanc. There are minimal interventions in the cellar during vinification: soft pressing, transfer of the musts into fût de chêne where all the fermentation and aging processes take place spontaneously. After the second fermentation, the cuvée rest on the yeasts for a variable period according to the single label; the remuage in the pupitres is done manually as well as the dégorgement "à la volée". Champagnes Lefébure are limited productions, the result of a rigorous and careful work and Marie-Lauren and Sébastien are destined to become one of the great emerging producers of the Region.
