In the vineyard, the work follows an approach respectful of natural balance, using plant infusions, cover crops, and minimal tillage to preserve the microbial life of the soil. In addition to Pinot Noir, Meunier, and Chardonnay, Aurélien also vinifies several cépages oubliés, such as Petit Meslier, Arbanne, Pinot Blanc, and Fromenteau, enriching both the biodiversity and the expressive range of the estate’s vineyards. In the cellar, his philosophy favors gentle vinifications and minimal intervention, resulting in Champagnes that are vibrant, energetic, and full of personality.
