Champagne Waris-Larmandier
Haute Volée
The Champagne Haute Volée by Waris-Larmandier is a Blanc de Noirs that reveals the deepest and most vinous side of Pinot Noir and Meunier grapes from Premier Cru vineyards in the Montagne de Reims, grown on soils of limestone, chalk, clay and flint. The parcels are farmed with great care and full respect for biodiversity, following the artisanal philosophy of the Waris family, who interpret each terroir with sensitivity and restraint from their home in Avize.
This edition is a blend of Pinot Noir and Meunier grapes, with vinification and fermentation carried out partly in wooden barrels through spontaneous fermentations that preserve authenticity and energy. After tirage, the wine ages on its lees for at least 24 months, gaining complexity and depth while keeping a taut and vibrant style, while the final dosage of 2.5 g/l, in the Extra Brut style, enhances the natural freshness and expressive power of the fruit.
On tasting, Haute Volée shows an intense golden yellow colour and a fine, persistent perlage, with a bouquet of crisp red fruit, ripe citrus and light spice, enriched by notes of toasted hazelnut and bread crust. On the palate it is broad and structured, with a mineral and savoury texture that supports a long, elegant and refined finish, typical of great terroir-driven Blanc de Noirs.
