Champagne Doyard
Vendémiaire Magnum
The Champagne Vendémiaire by Doyard takes its name from the first month of the French Revolutionary calendar, the month devoted to the harvest, and it clearly expresses the brightest side of the Côte des Blancs. It is a Blanc de Blancs made solely from Chardonnay grapes, sourced largely from old vines with an average age of forty years. These vines are located in the Premier Cru of Vertus and in the Grand Cru villages of Avize, Oger, Le Mesnil-sur-Oger and Cramant. It is an emblematic label, designed to convey with precision the purity, freshness and elegance that define the style of the Domaine.
This Blanc de Blancs blends three consecutive harvests and combines tradition with technical precision, beginning with the exclusive use of the moût de cuvée, the purest fraction of the pressing. Vinification and maturation take place 40% in fût de chêne, Burgundian pièces that have already held at least five wines, and the remaining 60% in stainless steel cuves, a choice that preserves brightness and aromatic clarity. Malolactic fermentation is carried out on only 20% of the wine, keeping an authentic and natural balance. After tirage, the wine ages on its lees for at least four years, gaining complexity, depth and finesse. The final dosage of 4 g/l, in Brut style, completes a profile of great precision and expressive purity.
On tasting, Vendémiaire shows a taut and elegant profile, with notes of ripe citrus, white-fleshed fruit and fresh flowers mingling with hints of hazelnut, bread crust and chalk. On the palate, the fine and creamy mousse supports a balanced structure, lifted by vibrant minerality that leads into a long finish of crystalline freshness and absolute precision.
