Champagne Apollonis
Palmyre
The Champagne Palmyre by Apollonis is a cuvée from the “Perceptions vibratoires” range, crafted by the original and musical vigneron Michel Loriot and dedicated to the women of the family. It is the result of a blend of 60% Meunier, 10% Pinot Noir, and 30% Chardonnay, harvested from the finest vineyards in Festigny, a prestigious village located in the Vallée de la Marne.
The current edition is vinified in stainless steel and aged for at least 30 months on the lees, a maturation that enhances the cuvée with complexity and depth. The absence of dosage highlights the purity of the Brut Nature style and faithfully reflects the character of the terroir.
On the palate, Palmyre reveals an elegant and vibrant profile: the nose opens with aromas of fresh citrus, green apple, white flowers, and delicate mineral nuances. The taste is tense, marked by great freshness and precision, leading to a persistent, crystalline finish.
