Champagne Val l’Hermite by Étienne Calsac is a Blanc de Noirs made from 100% Pinot Noir, with grapes harvested from the Lieu-Dit with southwest exposure, on Kimmeridgian soil, near the village of Bligny (Côte des Bar). Vinification and spontaneous fermentation take place in wooden barrels, followed by aging in the bottle (with cork stopper) for about 24 months, and no final dosage - Brut Nature.
In 2010, at the age of 26, Etienne became responsible for his family's domaine: 2.8 hectares of vineyards, aged 30, spread between Avize, Grauves and Bisseuil. His goal is ensuring that all grapes are grown under the Lutte raisonnée methodes. Etienne personally controls the grape pressing, before they are mixed and adds his personal touch to the already severe quality checkings. All bottles rest on yeasts for 36 months and after degorgement for 3 more months. The potential is unlimited, contrary to its cherished limited edition Champagnes.
