Doussot-Bourdot (Domaine)

The Domaine Doussot-Bourdot is located in Loches-sur-Ource, in one of the most renowned areas of the Côte des Bar, close to Burgundy. The young vigneron Billy Doussot cultivates 8.5 hectares of vineyard, divided between Pinot Noirand Chardonnay (7.5 and 1 hectare respectively), in the communes of Loches-sur-Ource and Essoyes, from which, since 2021, he has been producing Champagne under his own label with a precise and personal style.

The agronomic management is inspired by sustainable and regenerative practices: light ploughing, permanent grass cover, and compost-based fertilization are implemented, with no use of herbicides. In the cellar, the philosophy is one of minimal intervention: fermentations occur exclusively in wood with indigenous yeasts, without fining or filtration, and with long aging in new and used fûts.

Billy Doussot’s Champagnes stand out for their energy, tension, and purity, with a strong connection to the clay-limestone terroir of the Côte des Bar. Each cuvée is born from a careful selection of plots and aims to express the authentic identity of the grapes and the soil. An artisanal production, limited to around 5,500 bottles per year, signed by a young and promising vigneron.
