The Champagne Blanc de Blancs Millésime 2015 by Diebolt-Vallois is made exclusively from 100% Chardonnay, sourced from vineyards located around Cuis (Premier Cru), in the prestigious Côte des Blancs. After the tirage in 2016, this Champagne underwent over 6 years of aging on the lees, developing complexity and elegance before the final dosage of only 3 g/l, classifying it as Extra Brut.

This Blanc de Blancs perfectly embodies the purity of Chardonnay, fully expressing the characteristics of its terroir. Its creaminess and delicate floral notes make it particularly refined. Visually, it stands out for its brilliant yellow color, enhanced by a fine and persistent perlage. The aromatic bouquet is broad and complex, with scents of ripe white fruit, fresh citrus, and delicate flowers, enriched by a subtle chalky minerality, typical of the Côte des Blancs. On the palate, it reveals itself as harmonious and elegant, with a lively acidity that perfectly balances the fruity and floral notes. The long aging on the lees adds depth and softness, bringing out nuances of brioche and honey.

The Champagne Blanc de Blancs Millésime 2015 pairs perfectly with oysters, grilled shellfish, or fish carpaccio, but it can also be enjoyed on its own to fully appreciate its extraordinary aromatic complexity.

Jacques Diebolt is one of the best wine-growers in Côte des Blancs. The Maison covers a surface of 13 hectares, located in Cramant, Choully, Cuis and Mesnil sur Oger. Diebolt-Vallois Champagnes are the result of a united family: Jacques Diebolt Vallois and Nadia are helped by their two children, Isabelle and Arnaud, who are very active in the business. They are considered experts in the vinification of Chardonnay grapes.
