The Champagne Saignée de Meunier "Les Chenevières" by Denis Salomon is made from 100% Meunier, sourced from old vines planted in 1962 by Nicolas’s grandfather in the Lieu-Dit “Les Chenevières”, located in Vandières, in the heart of the Vallée de la Marne. The clay-limestone terroir gives the wine a distinctive identity, enhancing the varietal expression and aromatic depth of the grape.

The 2022 harvest gave birth to a cuvée with a strong personality, vinified in stainless steel tanks with no filtration or malolactic fermentation, in order to preserve the integrity of the fruit. The 24-month ageing on the lees adds structure and complexity, while retaining a bright freshness. The final dosage, contained at 5 g/l, places it within the Extra Brutcategory.

On the palate, "Les Chenevières" stands out for its aromatic intensity and solid structure, supported by vibrant gustatory tension. The bouquet is enveloping, with notes of ripe red fruits, intense flowers, saline nuances and a marked minerality, bearing witness to the deep bond between the cuvée, its place of origin, and the family’s legacy.

Located in the heart of Vallée de la Marne, in Vandières, with its 4.8 hectares divided into 22 parcels, among which the most important is Chenovières, where the oldest vines on the property are planted since 60 years old, and where Meunier is cultivated; Domaine Denis Salomon respects the traditions combining modernity with traditional methods. The property's brand was created in 1974 by Denis Salomon, and currently, his son Nicolas, who belongs to the fifth generation of the family, has returned after an experience in Bordeaux to take over the management since 2004. Vandières village is situated on sunny slopes overlooking the Vallée de la Marne and the vineyards enjoy a privileged southern exposure. The estate benefits from a terroir composed essentially of marl and the vines cultivated are divided by variety into Meunier (70%); Chardonnay (13%); Pinot Noir (16%); and a small part divided into Arbane, Petit Meslier, Pinot Blanc and Pinot Gris. Nicolas Salomon, winner of the Jeune Talent du Champagne Award, a competition that promotes creative professionals who show important know-how, has been behind major changes in the production approach, such as the decision to move towards integrated viticulture methods. The Domaine currently produces around 34,000 bottles a year and offers a wide range of Champagnes to suit all tastes, always aiming for the highest quality.
