"The sky gives birth, the land feeds and the man refines" - Bernard de Clairvaux. This is the philosophy of the biodynamic agriculture of David Léclapart. Biodynamics is the only viticulture bringing man, sky and land together. The soil is grassy, to create a favourite environment both for the vineyards and little animals. Some pricnciples can also be observed in the cave: precision, respect of life and its rhythms, search for pureness. This is the reason why barrels are so important. No vintage assemblage is created, for the soul's pleasure, so David Léclapart can offer a treu wine, inspiring our knowledge.

The Champagne L'Aphrodisiaque by David Leclapart consists of 80% Pinot Noir and 20% Chardonnay harvested from the village Trépail, classified as Premier Cru. No final dosage for this mineral, spicy and rare Champagne.

Champagne David Léclapart

The Domaine David Léclapart consists of 3 hectares, organised in 22 parcels, in the village of Trépail, Premier Cru in Montagne de Reims. When his father passed away, David Léclapart was 30 years old and decided to go back to his family origins under one condition: the vineyards should be converted to biodynamics. A second radical choiche - no dosage in their Champagne - complicates the results, because every single invisible mistake in the process or defect in the grape maturation is exaggerated. The absence of chemicals, the grassy spontaneous soils, and the use of biodynamic preparation are not enough for this wine-producer's desire of plainness.
