True to a craft philosophy, Adrien Dhondt works without certifications but using organic and biodynamic methods: no herbicides, homemade compost, and, where possible, animal traction for plowing. In the cellar, he adopts a minimalist and respectful approach, with spontaneous fermentations in oak barrels and very limited use of sulfites. His style is deeply inspired by Burgundy, favoring expressive purity and precision. His Champagnes are authentic interpretations of terroir, capable of combining freshness, depth, and a strong identity.
