The composition of Champagne Extra Brut Cuvée 72 is based on the three typical grape varieties of the region and is the expression of Champagne and its production technique, which is inspired by the fundamental rule of assemblage. Representing more than 60 % of sales, it is the Maison's best-known Champagne. Therefore it wants to be a wine of the highest quality, able to remain true to itself, in exceptional vintages as in the most difficult ones.

This Champagne is composed of a high percentage of noble grape varieties, about 22 % Meunier, 33 % Chardonnay and 45 % Pinot NoirVins de réserve are always included in the blend and like all the other Champagnes of the Maison, Cuvée 72 unlike Première Cuvée Bruno Paillard, rests 36 months in bottle in the cellars of the Maison before being marketed in addition to aging 36 months on its own yeasts, thus the number 72 (36 +36).

The Cuvée 72 by Bruno Paillard is little dosed, an authentic Champagne, whose complexity and balance are its fundamental characteristics.

Bruno Paillard was born in Reims in 1953 and started his activity as courtier in 1975. In 1981 he founded the Maison with his name: Champagne Bruno Paillard. Nowadays he owns around 32 hectares spread around the best Grand Cru terriroties in the Champagne region, with an annual production of 500,000 bottles. This is a limited production, since he strongly wants to pursue quality by the best grapes, the first pressing, and a really low dosage: wines reserves are then used to create his Cuvées. After disgorging, the bottle rests for at least 6 months before reaching the market. This is the ideal amount of time according to Bruno Paillard to recover from the oxydation stress due to disgorging. He is so proud of his method, that he started indicating the disgorging date on the Champagne label in 1983: many other maisons now follows this practice.
