BD'3CC - Trois Cépages Collection 2015

The Champagne BD'3CC - Trois Cépages Collection by Domaine Bourgeois-Diaz is made from 45% Chardonnay, 35% Pinot Noir and 20% Meunier grapes harvested from the best plots in 2015. The vinification takes place for 50% in steel and for another 50% in fût de chêne. No final dosage - making it a Brut Nature - for this Vintage Cuvée of great finesse and aromatic purity. Produced in limited quantities of only 2,592 bottles.

Champagne Bourgeois-Diaz

The Domaine Bourgeois-Diaz has about seven hectares of vineyards in Crouttes-sur-Marne and the neighbouring villages of the Vallée de la Marne. The Domaine is now run by the fourth generation with Jérôme Bourgeois, born in 1977, who, with tradition in his blood, felt the need to go beyond it. Among the estate's vineyards, 3.5 hectares are planted with Meunier, 2 with Pinot Noir, 1.3 with Chardonnay and a very small plot in Pinot Blanc. The vines are on average 40 years old and derive their vitality from the clayey and calcareous soil. Under Jérôme's vital push, the Domaine Bourgeois-Diaz began to convert to biodynamics and to carry out micro-vinifications in order to understand even more deeply the characteristics of all the plots.  In 2016, Jérôme's wife Charlotte joined the Domaine, and today she plays an important role, supervising and helping to develop the quality of the Champagne. In the vineyards, no pesticides or chemical fertilisers are used, and as time goes by, vines regain their essential nature. At harvest time, the grapes are collected when ripe and selected, so that only perfectly healthy grapes are brought to the cellar. The bunches are pressed in a traditional "Coquard" press, separating each grape variety and each plot. The must rests for 12-15 hours, is racked and fermented in a vat with indigenous yeast. Malolactic fermentation then follows spontaneously. 60% of the volume is vinified in stainless steel tanks, 25% in wood and 15% in cement and clay. Each container used gives the wine a different character, reinforcing the complexity and freshness of their blends. This is the origin of the "Bourgeois-Diaz" label, for Champagnes that follow the rhythms of nature, to express the deepest essence of the terroir in the glass.
