Cuvée de l’Orme by Benoît Déhu is an elegant Blanc de Noirs that embodies the essence of craftsmanship and the deep connection with the terroir. Made exclusively from pure Pinot Noir, this Champagne originates from a parcel selectionlocated at the foot of the hillside in Fossoy, in the Vallée de la Marne, where the vines come from a massal selection of clones originating from Pommard. The vineyards are cultivated biodynamically, following the lunar calendar and promoting biodiversity, in full coherence with the winemaker’s philosophy of respect for nature.

The base vintage comes from the 2017 harvest with vinification in 228-liter oak barrels, where the wine ferments spontaneously and ages on the lees for about 10 months, developing depth and complexity while preserving its aromatic purityNo fining or filtration is carried out, to fully preserve the fruit’s integrity and the true expression of the soil. After bottling, the wine rests for at least 48 months on its lees and is disgorged with no final dosage – Brut Nature.

Upon tasting, Cuvée de l’Orme shows a bright golden yellow color and a fine, continuous perlage. The bouquet is intense and distinctive, with notes of rye breadred apples, and delicate floral accents. On the palate, it displays breadth and structure, accompanied by ripe red fruits and a vibrant minerality, leading to a long, refined, and harmonious finish.

Produced in extremely limited quantities, this Blanc de Noirs Champagne represents one of the purest and most refined expressions of Pinot Noir, confirming Benoît Déhu’s desire to craft authentic cuvées, true to their origin and to his personal winemaking vision.

The Domaine Déhu Père et Fils was born in 1787 and is actually managed by the 8th generation; after a long experience by Maison BollingerBenoît went back to the family domaine and with his stron future vision he launched his production towards the organic viticulture. Benoît works on a small parcel (lieu-dit) of 1.7 hectares in Meunier, using biodynamic methods: he relies on horses, follows the moon cycle, harvests only in the morning and in 5 steps to get the maximum maturity, presses the juice with a small press of 2,000 kg. Benoît focused on a high quality grape representing the fundamental base of his work, allowing nature to do its course and interpreting the results in a personal way. The style of Benoît's Champagne is intense, energetic, with a mineral fineness and a seducing aroma of white flowers. Even if his production is limited, his Champagnes are conquering lovers' palates.
