The Champagne Abelé 1757 Blanc de Blancs is made from 100% Chardonnay grapes, mainly from the villages of Pierry, Bergères-les-Vertus, Villenauxe-la-Grande, Bethon and Bassuet. 20% vin de réserve is added to this Blanc de Blancs to give it more complexity. Fermentation takes place in steel tanks, followed by draught and a minimum of 3 years ageing in the Maison's evocative 100-year-old quarries, an environment that favours optimal maturation of the wine. The result is a Blanc de Blancs characterised by an extraordinary aromatic richness and enveloping freshness, accompanied by a profile of ripe fruit aromas that enhance its finesse.
On the palate, this Champagne Blanc de Blancs reveals to be rich and pleasant, highlighting the freshness resulting from the blend of grapes from complementary terroirs. It brings out distinct, sweet and harmonious floral fragrances, such as those of hawthorn and mimosa. The refined elegance of the floral aromas is followed by the well-balanced ripeness of fruity aromas of white peach, apple and pear. In the mouth, it is broad and creamy, surprising for its fullness and the variety of fruity flavours already perceived on the nose. After a few moments, a pronounced mineral hint of chalk emerges, giving balance to the wine's structure. The finish is lively but well controlled, long and harmonious, characterised by a fresh citrus note, with hints of grapefruit.
